A superb 2018 Grand Cru from William Fevre

William Fevre is a name that is rightly famed in Chablis. Winemaker Didier Seguier has been in charge here since 1998 and the depth of his experience tells – the wines are consistently excellent. In his recent Burgundy book, Jasper Morris describes Fevre as ‘one of Chablis’ greatest domaines’. 

A standout Fevre wine for us from a recent tasting is the 2018 Grand Cru Les Preuses. Les Preuses, situated next to Bougros in the block of grand crus on the right bank of river Serein, has deep but well drained topsoil that gives intense, structured wines. The 2018 has particular richness; the vintage was unusually sunny and dry. It is a vintage that Neal Martin characterises as ‘charming and seductive’, and Fevre’s 2018 Les Preuses is a case in point.

Winemaking at Fevre is always done in the same way, with the aim being to produce wines classical in style. All grapes are hand harvested, before being fermented in a mixture of old oak and stainless steel. They are aged on the lees for 12-18 months in tank before further maturation in old oak. The result is clear, pure fruit character and delicate texture on the palate.

We have just tasted this wine and it is showing brilliantly. Approachable now, it is just starting to open up and will be even better with another year or so in bottle.  Buy some now and drink over the next 5-10 years.
