Domaine Francois Raveneau makes Chablis that is unrivalled. The wines are – quite simply – breathtaking. Made in tiny quantities each year, they unsurprisingly attract a devoted following. If you can find them, these are wines that live up to the hype.
The domaine comprises ten hectares and is run today by Isabelle Raveneau, the third generation of the family to make wine here. The grapes come from very low-yielding vines, giving small quantities but intense flavours. The grapes are always crushed before pressing, then fermented in stainless steel tanks. Maturation is largely in old oak, and the domaine has recently added some larger format oak to enhance finesse. From village to grand cru level, the wines are known for their depth, intensity, and extraordinary longevity.
