Billaud-Simon is known for producing classic Chablis in a crisp, steely style.
The domaine owns 17 hectares of land in total, with holdings in four top grand crus and four premier crus. Grapes for the premier and grand crus are hand-harvested before pressing using a pneumatic press. Fermentation is in stainless steel and the wines have significant lees ageing. A small proportion of oak is used for maturation.
Billaud-Simon has recently been brought under the same ownership as Faiveley, and winemaker Oliver Bailly has been in charge here since 2015. The wines have become slightly more fruit driven in the Faiveley era.
